Question by spidermonkey: Does anyone have a good vegetarian soup recipe?
I am 7 weeks pregnant and having a really hard time keeping food down. I need a recipe for some really mild soup. I’d prefer a vegetarian recipe, or one where vegetable broth could easily be substituted. Also, maybe something with rice or pasta in it would be nice, so I could have something with substance.

  1. I love this soup, you can add or sustitute whatever you want to it, rice, pasta….whatever! This is how I make it…

    Chicken Broth
    Frozen Corn

    While it’s heating I cut up flour tortillas into strips and shake them in a bag of butter and garlic (You can leave this step out, it just adds flavor) and broil them on low until they are crispy.

    When soup is heated through I put shredded cheese in the bottom of the soup bowl (you can also leave this step out) and pour soup over the cheese. Place crispy torillas on top of the soup and add a scoop of sour cream (Again leave this out, if you’d like).

    Easy and tasty, warms you right up!

    I do not know if this helps, but I know how early pregnancy can be so I feel for you, I have 2 children and am 10 weeks with #3.

  2. Soup is so wonderful because you can add whatever you like, and omit things you don’t. Start with sauteeing a large onion in a little olive oil, then add 1 quart of vegetable stock. Add 1 can red beans, rised, 1 can white beans, rinsed, a box of frozen spinach (you could also substitute kale or escarole), 1/2 rice, and 1 can diced tomatoes. Simmer until rice is soft…about 20 minutes.
