Chickpea Soup:

INGREDIENTS
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 cups peeled and chopped sweet potatoes
3 cups chicken broth
1 bay leaf
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/4 teaspoon paprika
1 tomato, chopped
1 (10 ounce) package frozen mixed vegetables
1 (15 ounce) can garbanzo beans, drained
salt to taste
ground black pepper to taste

DIRECTIONS
In a saucepan, warm oil over moderate heat. Add onion, garlic, and sweet potatoes; saute 5 minutes.
Stir in broth, bay leaf, basil, thyme, and paprika. Salt and pepper to taste. Bring to a boil, and then reduce heat to medium low. Cover. Simmer until vegetables are tender but not mushy, about 15 minutes.
Stir in tomato, green beans, and chickpeas. Simmer uncovered until tender, about 10 minutes more. Serve hot.

Thai green lentil soup:

Ingredients
1/2 medium onion, chopped
2 tablespoons olive oil
2 medium carrot, chopped
14 ounces chicken broth (1 can)
1 1/4 cups water
1/2 cup french green lentil, rinsed
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
salt and pepper

Directions
1) Saute onion in olive oil.
2) Add chopped carrot.
3) Add remaining ingrediants and cook on medium heat until lentils are soft.
4) Salt and Pepper to taste.

  7. I did a search for Thai soups, then searched for those recipes that had green lentils and chickpeas…I could only find one. I hope that this recipe helps you out!

    Meal-In-One Vegetable Soup

    1 tablespoon olive oil
    1 (12 ounce) package tofu, cut into small cubes
    1 medium onion, chopped
    1 garlic clove, peeled and crushed
    3 tablespoons fresh cilantro, finely chopped
    2 teaspoons fresh ginger, grated
    1/2 teaspoon cumin powder
    1/4 teaspoon celery salt
    1 pinch cayenne pepper
    1 cup diced tomatoes
    2 tablespoons tomato paste
    5 cups vegetable stock
    1-2 cup cooked green lentils
    1-2 cup coooked chickpeas
    salt & freshly ground black pepper

    In a heavy saucepan over medium heat, heat olive oil. Add onion, and cook until tender (about 5 minutes).
    Add garlic, seasonings, tomatoes, tomato paste, and stock. Bring to a boil, reduce heat, cover, and simmer for 30 minutes.
    Add lentils and chickpeas. Season with salt and pepper. Stir well, and continue cooking for 5 minutes.
