Question by : How can I make thick tomato basil soup. The kind I tried may have possible contained bread as a thickener.?
I had this soup at the Fork and Spoon in New Braunfels, Texas and it was the best soup I have ever had. I just cannot seem to recreate it. Any ideas??

It is extremely simple to make the concoction you are attempting to concoct. In order to make the soup thick you must simply find a luscious ripe tomato with a width of precisely 2.75-3.25 inches. Once found, cut off the stem. Place the tomato in a boiling pot of water for exactly 1 minute. Add a teaspoon of basil and a tablespoon of olive oil. Take the tomato out and cut it in half, once cut in half sprinkle a dash of cilantro on each half. put the tomato halves back into the pot and put three chicken bones in the water to add flavor. Take the tomato halves out and allow them to marinate in a pot of whole cream for 5 minutes. Re insert the tomato halves into the boiling pot of water. Place two whole celery stocks in a saucer of half and half cream for 3 minutes. Take the celery stocks out and dice them, finally place the diced celery in the pot. After boiling for 2 more final minutes you will have created a tomato sauce that will create a wonderful taste experience.

  4. A general recipe for tomato soup that I make contains:
    1 Vidalia chopped sweet onion caramelized in oil
    add 2 stalks celery sliced
    add 2 carrots chopped coarsely
    add 8 cups chicken soup base
    add 1 can stewed tomatoes
    add1 small can tomato paste
    season with oregano & basil to taste salt and pepper
    add 1 tsp chopped fresh garlic from jar.
    1 tbsp honey to take edge off soup and to season
    If you add a handful of elbow macaroni to your soup it will thicken by using the liquid from the soup to soften, and soup will thicker, or you could add some pre-boiled macaroni after your soup is finished.
    Do not use bread to thicken soup.

  5. Without having more information it is hard to give a complete answer. Are you making it with fresh tomatoes? Seed and drain the chunks before cooking.
    To thicken soup dissolve cornstarch (1T. or so) in cold water. Add to soup a little at a time and bring to boiling point. The cornstarch acts as the thickener.. Flour or arrowroot can also be used – just be sure to dissolve in cold water before adding to hot soup or it will clump up and leave lumps.
