  5. LOL, how cute, a tin of those plum tomatoes you purchase at the stores should be good and a little tin of tomato paste, a medium sizee onion as well as 2 cups of oil. Hope this helps

  12. I’ve found that there are pros and cons with any oil. It actually boils down to what you are cooking. Since this recipe calls for the tomato to be cooked on high heat, an oil with a low smoke point could ruin the stew. If you’re not eating fried foods or high fat foods everyday, using vegetable oil would be fine.

  17. I use grapeseed oil in my jollof rice. It works well for fried eggplant also.

  18. You’re welcome. Red palm oil is high in saturated fat, but recent advances in nutritional science are starting to conclude that saturated fat may have gotten an undeserved bad rap. The new culprit seems to be highly processed hydrogenated fats. Vegetable oil is one of them.

  19. oh, ok I’ve just always thought red palm oil is mostly saturated fat since it solidifies at room temp but I will be looking into it like you said. Thanks for the info :)

  20. I tried this tonight and it is really good! I had to use all can tomatoes and paste and used olive oil (it was all I had in a big amount) I can’t wait to try it with fresh ingredients :)

  21. I think you should look into it, even if you do a quick google search on vegetable oil whose consumption has been linked to heart attacks and forms of cancer. Red palm oil is high in alpha and beta carotenes, the most potent form of vitamin E, and healthy fats.
