    Tomato Sauce: (for scallops)
    2 cups cherry tomato, halved
    1/4 cup red onion, chopped
    1-2 jalapeno pepper, seeded and chopped
    2-3 garlic clove, minced
    2 tablespoons caper, rinsed and chopped
    2 tablespoons fresh lemon juice
    1/2 lemon, zest of
    3 tablespoons fresh basil, sliced
    3 tablespoons parsley, chopped
    1 tablespoon oregano, chopped
    1/4 cup olive oil
    salt and pepper

  11. with scallops I would sautee in olive oil: fresh diced tomatos, shallots, basil and some white wine

  12. I don’t think I would put tomato sauce on scallops because their flavour is so delicate. But if you were going to you need a very simple sauce like this one.
    This is an all purpose easy basic recipe that goes with many things manicotti, veal parmesan, good on mussels with a bit of spice too.

    saute 2 or 3 or more cloves of garlic in your pan
    1 19 oz can tomatoes broken up
    1 small (7 oz?) can of tomato sauce
    1/4 tsp thyme
    ground black pepper

    Simmer 20 or 30 min or make ahead.

    3 cloves garlic
    onion 1 large
    1 can tomatoes
    1 red pepper
    salt and pepper
    handful of fresh basil
    1 tsp sugar

    saute onions garlic peppers in some oil on a low heat for ten minutes until soft but not coloured add tomatoes salt and sugar and simmer for ten mins take off heat and add basil and blend smooth mmmmmmmmmmmmmm yummy

    4 large tomatoes diced
    1 onion diced
    1-2 slices of green bell pepper diced
    1 garlic glove
    1-2 tbs olive oil
    1 tbs sugar
    little bit of salt and pepper
    water (how thick u want it?)
    tomato paste

    in a pan put the garlic, tomatoes, pepper, and the onions, let them cook over medium heat, keep maching them as u stir
    after they all get mashed up
    add everything else (oil,water…etc.)
    let it cook for 20 mins until the water reduces and u get the thickens u want

    taste it, add seasonings if u feel something is missing

    i usually use it for pizza
