Question by graatgal: What can I do with 11/2lbs of tiny yellow tomatoes?
I have been growing these little yellow and red tomatoes and I am wondering what to do with them? Every day we have more and more.

  1. You could make salsa or tomato and mozzarella salad with balsamic vinegar, olive oil and basil leaves.
    You could drizzle them with olive oil and seasoning and roast them in the oven as a side dish to cooked meat.

  2. Chop them with lime juice, onion and avocado. Use as a dip or use on chicken.

    Make a sauce. Put them on pizza. Salad. Eat them.

  3. You can use them in a variety of ways. PASTA SAUCE: Cut them in half and saute with onion, garlic, fresh herbs, a bit of sugar and olive oil just until the skins start to shrink and they release their juices. Add salt and pepper to taste and serve with cooked pasta. This is also good with a can of tuna, drained well and sauteed along with the veggies.

    AMERICAN BRUSCHETTA: Roast them in a 425 degree oven for about 8 minutes with salt, pepper and olive oil and a dash of sugar. Put them on toast points (toast cut into triangles), top with grated cheddar or parmesan cheese and return to the oven.

    ITALIAN BRUSCHETTA: Chop onions, garlic and tomatoes into a medium dice. Place on top of Italian bread slices and top with grated parmesan and Fontina cheeses. Drizzle olive oil on top and bake at 425 degrees until cheese is melted.

    FRESH SALSA: Chop both yellow and red tomatoes in a food processor. Add chopped onion, a small jalepeno, a tablespoon of fresh lime juice and fresh cilantro, a dash of sugar, salt and pepper to taste. Refrigerate for about an hour and serve as a fresh salsa.

  4. Cut them in half, drizzle with olive oil and red wine vinegar, and then season to taste. I put salt and basil on mine, my husband likes pepper and oregano. You can serve them like this, or you can also put some mozzarella or parmesan cheese with this.

    You can also make tomato sandwiches, just halve them or slice them (depending on how small they are), spread white bread with mayonnaise, and assemble. It must be white bread, and it must be real mayo. You can add salt and/or pepper if you like.

    Greek salad with onion, cucumber and tomato is great…just a little olive oil and feta cheese…..
