Question by Lulu: How can I make tomato paste taste more like pizza sauce?
I’m making mini-pizzas, and for the sauce, I only have spaghetti sauce and tomato paste. How can I make a quick, good tasting pizza sauce?

Add some herbs to it, maybe a bit of garlic. Then put loads of cheese on it :)

  1. fry a diced onion slowly until; golden, sweet and caramelized, add a couple of cloves of garlic, basil if you have, a little water to the puree, a big pinch of sugar, salt pepper and let it reduce a bit, puree needs to cook for a while.

  2. I always use jarred spaghetti sauce on my pizzas. I don’t want a “knock you in the face” tomato flavor, and that is great for my pizzas. Just use that spaghetti sauce, and save the paste for another dish.

  3. If you use straight tomato paste, you’ll notice a bitter taste. Thin it down with a little of your spaghetti sauce. If spaghetti sauce is plain, then add some garlic powder, onion powder, oregano or sweet basil and a pinch of sugar. If you only have garlic/onion salt…be careful, you don’t want to make it too salty. If your spaghetti sauce is already spiced up, just use it as is. There isn’t much difference between pizza sauce and spaghetti sauce.
