Question by Dee: Simple pasta sauce recipe using tomato sauce, dried spices, and vegan meatballs?
I have some tomato sauce that needs to be used up. Back home I have a plethora of vegetables from my garden, so I don’t want to go out and buy any. 😛 (I’m at my cousins house watching her cat)

Does anyone have a recipe using only dried herbs/ spices + onion powder/ garlic powder? That’s good? I’m having trouble finding one…

Here’s my recipe. If you don’t have garlic or onions, you can substitute it by adding a little garlic powder and onion powder. Or skip it all together. Also, since you said you have tomato sauce, that will do just as well. I hope I helped. Pasta sounds so good right now : p

Ingredients
* 2 tsp olive oil
* 4 cloves garlic, minced
* 1 ( 28 ounce ) can crushed tomatoes
* 1/4 tsp dried thyme
* 1/4 tsp dried oregano
* 1/2 tsp salt
* Several pinches of freshly ground black pepper

Directions
Preheat a saucepan over medium-low heat. Add the oil and garlic and saute for about a minute, until fragrant, being careful not to let it burn. Add the remaining ingredients, cover and raise the heat a bit to bring to a simmer. Simmer for about 15 minutes, stirring occasionally.

You can start cooking your noodles while the sauce simmers. Once your noodles are done, in 8-9 minutes, drain and set aside. Cook your meatballs according to directions. Add the noodles to pan that is lightly oiled and mix well with the meatballs and sauce.

  1. Do you have any onion or garlic? If so, saute them in olive oil until soft, then add the tomato sauce and herbs, stir, then the meatballs, then simmer.

    If you don’t have fresh versions, put the tomato sauce directly into the pan, add a pinch or two each of garlic and onion powder, then good-sized shakes of marjoram, basil, and oregano. Toss in the meatballs and simmer until they are warmed through. Give it a taste to see if it needs anything. Salt, pepper (black or red), more herbs? If you’re watching salt, use a few drops of balsamic vinegar.

  2. Make ketchup!

    Take 2 cloves of garlic and about 2 stalks of celery. Mince them really fine, and then then sautee them in some extra virgin olive oil. Then, mix that with the heated tomato sauce (~3-4 cups of it). Delicious :)
