Chicken, hard-boiled eggs, and beans are all great protein sources to add. Use a full-fat dressing so that you can absorb the vitamins in the vegetables. Carrots, onions, mushrooms, cabbage, spinach, radicchio, arugula, peppers, pretty much any vegetable you can think of will go great in a salad. Don’t use iceberg lettuce; it has no nutritional value!

  1. I just saw on tv where a restaurant puts the little tomatoes on a sheet pan covers it with another sheet pan and while holding down the top sheet pan they run a knife from one side to the other in between the pans and it cuts all the little tomatoes in one two three…I love tomato salads… I mix tomatos onions a bit of oil and a very small bit of vinegar and salt… I leave it in the fridge an hour or two before serving so the onions flavor the tomatoes… are u still making videos????

  2. Add to what? Are you talking about a green salad with lettuce or spinach or whatever leafy veggies?
If that so, you can add anything you like and that is healthy, since you want healthy. A good combination is a few olives (they’re the good kind of oil), a hardboiled egg (discard the yolk if you really want a low calorie salad), one slice of ham and one slice of cheese. You can also throw in some mushrooms if you like them as I do.

You could have a very fulfilling 200 calorie salad with 4oz of lettuce (20 calories), 2 egg whites (35 calories), ½ oz of mozzarella cheese (40 calories), 3 olives (15 calories), 2 slices of ham (50 calories), some bacon bits (10 calories) and 1 Tbsp of lite vinaigrette (30 calories).

Of course, your salads always depend of what is in your fridge, unless you’re going grocery shopping. You usually always have eggs, cheese, ham and olives.

You’re fine as long as you don’t use high calorie sauces (the white kind) or mayonnaise and don’t eat those 800 calories fast food salads (like Taco Bell Chicken Fiesta Taco salad) or a 2,115 calorie California Pizza Kitchen Thai Crunch Salad!! I only indulge in one tsp of mayonnaise if I do a tuna sandwich…but that’s about how far I will go.

Now, for some variety, you might want to explore the wide world of great salads…like pasta salads (penne, elbows. any small pasta, a great way to use leftovers…) with artichoke, lemon, tomatoes and parsley…or a potato salad with tomatoes, anchovies, shallots, olive oil, mustard and chervil.

Any leftovers: pasta, chicken, salmon, veggies like broccolis can be use for great salads.
