Question by falblute: How do I build an outdoor drying tray for chilli peppers and tomatoes?
I have an out-of-control garden that is putting out tomatoes and peppers to no end. I would like to take advantage of this and dry some out to use in dishes this winter, and have done research to try to find out how to build a drying tray, but nobody seems to like explaining it clearly. Anyone able to help? Thanks!

just put an old window screen in a sunny spot, lay on the veggies, and it will happen…no problem

  2. well i have seen and explained how they are build ,but the best replication of the real thing is to get a baking tray then put like a rack in it and put the tomatoes or peppers to dry in the sun.what may cause spoilage is the liquid and thats what you wanna get rid of and stop enzymatic action.

    and if you wanna preserve why not make a pickling for the pepper.they’ll be tasty and just as good.

  3. You should just dice up those peppers, label in freezer boxes or freezer bags and stick them in the freezer. Also, you have most of the ingredients right there for salsa. It is easy to can and my family loves it. Also, If you can’t make salsa, dice tomatoes and peppers together and put in freezer containers and you’ve got a nice addition to soup.

  4. To sucessfully dry tomatoes is you need to remove the seeds from them before trying to dry them. But, For making a drying rack take 2 window screens and place the prepared vegis on one and place the second one over the vegis and the first screen. Clamp the screens closed with several of those big black paper clips like you get at office supply stores. place in the sun and let dry.

    However, I dry my vegis in the oven set at 150 F. I seed my tomatoes and slice them into thin strips then when dry put the tomatoes into a mason jar and fill with oilve oil. Idry my tomatoes and other vegis on a baking cooling rack over a cookie sheet. The cooling rack has wires close together and are woven in opposite directions to form little squares.I also seed my peppers for drying if they are the large sweet varieties. The small hot peppers I leave intact except to punch a couple small holes into the pepper to help moisture escape from the inside. Good Luck!
