Question by Kai’s Mama: Frost is here– what should I do with my green tomatoes?
I’ve looked around online and found quite a few recipes, but I wondered what YOUR favorites are. I’ve already picked them all, so don’t tell me that I can cover the plants to try to extend my season. Off 4 plants, I picked 102 green tomatoes! I’d like to be able to ripen some of them, so ideas for that will work too…
Help me, please; I can’t let these go to waste!

Take the larger ones that are full grown but still green and put them in a sunny windowsill to ripen. (not all of them will)

The rest can be used for fried green tomatoes. My favorite way is to slice them thick, dry off with a paper towel, dip in beaten egg, then roll in crushed mixture of saltine cracker crumbs and ritz cracker crumbs, then fry til golden brown in bacon drippings. Many people simply slice, dip in flour/salt/pepper coating, and fry in oil, but the egg/cracker crumb/bacon drippings way is much tastier.

You’ll still have a lot left though, I would chunk them and freeze, to add to things like casseroles, spaghetti sauces, things like that.

  4. It depends with the one cooking. There are many different types of omelette. There are ones that are not folded. Some are just folded once while some are rolled. Depends with you, my friend. Peace. :)

  26. If you wrap the large tomatoes in newspaper and put them in a box in the basement, they will slowly ripen. Check them over regularly and use the ones that have ripened and catch the ones that may be spoiling.

  27. Best trick for ripening green ones is to keep a ripe one with them. The gas it gives off hastens the ripening of the others. I laid mine out on newspaper on the spare bed and left a couple of ripe ones always there, and they all ripened eventually, but not all at once, which was great. Good luck.

    Also you can make green tomato chutney if you want to.
