Question by Evie Meier: Ways to make a leafy green salad less boring?
I’ve been eating lettuce, sometimes baby spinach, with cherry tomatoes, spanish onion, cucumber, carrot and balsamic dressing. Sometimes I have feta. Any other things I could include? Capsicums are pricey sometimes.

try a mix if iceberg and romaine lettuce with Greek olives, cherry tomatoes, Parmesan cheese and red onions with a balsamic vinaigrette

Make it into a wilted lettuce salad with a bacon vinaigrette.
Hope that helps. You could add things that would give it a different texture such as belgian endive, radicchio, kale, etc.
Mushrooms, thinly sliced summer squash, radishes, green onion, fresh herbs, shredded cabbage, celery, sprouts, broccoli, cauliflower, fresh greens such as mustard or turnips
There are many “mix ins” you can add to a salad to make it less boring.
Vegetables:
Artichokes, avacado, banana peppers, peas, broccoli, chick peas, radishes, corn, kidney beans, white beans, black beans, edamame, snap peas, green beans, mushrooms, olives (black or spanish), red peppers, dried tomatoes, etc.
Fruits:
Apple slices, apple chips, mandarin oranges, craisins, raisins, strawberries, grapes, any dried fruit, etc.
Proteins:
Crumbled bacon, grilled/breaded chicken, ham, pepperoni, shrimp, tofu, tuna, turkey, egg, egg whites, cheese (crumbled, shredded, grated, etc.), cottage cheese, etc.
Other toppings:
Croutons, Chinese noodles, pecans, almonds, walnuts, tortilla strips, pasta, etc.
Or you could always change up your dressing. There are many vinaigrettes and creamy dressings, or even just some olive oil or vinegar would do!

I imitate other dishes with my salads.
On Monday I had a sweet and sour chicken salad to curve my craving for sweet and sour chicken. Instead of fried chicken I grilled a chicken breast and had it on a bed of baby spinach with chow mein noodles, roasted grape tomatoes, pineapple and bell pepper with almonds and a sweet and sour vinagrette dressing.
On Wednesday, I needed a burrito so I had ground turkey which I sauteed in olive oil and chili powder, black beans, corn, tortilla chips, jalapeno, cilantro, tomatoes and romaine lettuce with salsa for dressing…okay..and a dollop of sour cream…lol I also make a cilantro-lime dressing for this that is so very good, but I didn’t have limes.
Yesterday (Friday) I made my rendition of a BLT with romaine lettuce, red cabbage, bacon, turkey strips, boiled egg, red onion grape tomatoes, peas, cheddar cheese, croutons with balsamic vinaigrette dressing.
Also, I eat salads every other day, one week MWF and the next TT. Experimenting and making your own dressings also help and is fun.
Balsamic vinegar and olive oil (extra-virgin/cold pressed is best) will give a great and healthy taste especially with the feta cheese.
You can also roast some raw almond slivers in the oven (250 degrees for about 15-20 min or until lightly brown then salt it) for a topping.
Seasonings such as red pepper flakes are good for the heart, slices of ginger root, sunflower seeds, minced garlic, black pepper (you grind yourself), sliced marinated artichokes (they sell them in a jar at Trader Joes), black olives, pepperochinis, and sun-dried tomatoes. Stater Bros also sells an awesome Greek seasoning (can’t think of the name but it comes in a small yellow shaker) that’s perfect for salads, and Trader Joes also has great salad season mixes with no MSG or other junk in it.
I love to add sliced salami, chopped pears, and toasted slivered almonds to my salads. Or try adding corn, crushed tortilla chips, and black beans!

Slivered almonds or walnuts. Lemon, peaches, or mandarins. Add some grilled chicken strips? Change up the dressing. Raspberry or blackberry vinaigrette is good with spinach and Spanish onions.
I like romaine lettece and sometimes I add leftover chicken to it…
