Question by That: I live in Chicago and want to live off a garden next spring. What all show I grow to not starve?
What should I plant and when should I start? Are there any fruits and veggies that will fill me up? I have a 10 X 10 space to use. Are there any tomato recipes for jarring? Any veggie recipes you can recommend?

If all you have is 10×10, tomatoes would be terribly unwise. In Chicago, you can’t even start tomatoes until late April, and Spring is half done by then. They’re obnoxious to deal with, too, because nearly every insect feeds on them and they are highly susceptible to an array of diseases. Nothing like spending $ 50 building up a bed of tomatoes only to have them get raped by aphids, stinkbugs, and wilts.

I suggest trying leafy greens/brassica crops (cabbage, kale, mustard, turnips, etc) because they require cooler temps to grow well. Once those are on the way out, you can move onto beans, corn, and peppers…but again, 10×10 won’t do much for you.

1/4 c butter
1/4 c chopped onion
2 T chopped celery
2 T chopped green onion
1 1/2 c (1 lb) tomatoes
2/3 cup beef bouillon
1 tsp salt
1 tsp basil
2 T flour
2 T dry vermouth
1/2 c cream or half-and-half

Melt 2 tablespoons butter in saucepan, sauté vegetables; add tomatoes, broth and seasoning. Boil; simmer 30 minutes, remove from heat. Whirl in blender. Mix remaining 2 tablespoons butter with flour; drop into boiling soup gradually until thick. Add vermouth and cream; DO NOT BOIL. Garnish with sour cream and parsley.

    Like above, 10 x 10 is limited, not enough to produce enough tomatoes to can, but that doesn’t mean one tomato plant trained vertical won’t work…….along with other goodies.
