Question by Emily J: Can I make a good tasting vegetable broth out of what I have?
Here’s the deal, I don’t have very many vegetables, but I’m really craving vegetable broth, would I be able to make a decent vegetable broth out of these veggies?:
broccoli
Celery
Carrots
I have some frozen peas
Cherry tomatoes
any ideas? Or if not, what else can I make out of them?

You can, just add some herbs if you have them. An onion would help greatly as would garlic. Add the tomato last. If you put the broc, celery and carrots on to cook let it come to a boil and then cook for about 1/2 hour or more than I would put it in a blender and puree it. Cook with a small amount of water to concentrate the flavors then you can add more water to taste at the end.

Keep the broccoli out of the mix – it’s too overwhelming. Add some onions (if you have them), garlic, parsley, salt & pepper. Not sure about the cherry tomatoes either – might want to peel & seed them as their skin can be pretty tough…then again, you could always strain that out later.
