Question by MrsGuess: I love Angel Hair pasta in authentic spaghetti sauce. Any good recipes?
I have been trying for years to make excellent angel hair pasta but the canned and jarred sauces just aren’t good enough. Anyone have any homemade recipes for me? I don’t want anything to drastic, just some great homemade pasta.

Cook the pasta for one minute less than the American package time. It will
be al dente and ready to add to the sauce for a bit more cooking.

I personally prefe rthe term ‘Slut’s Spaghetti’. This has become a regular
in our household now, it’s that good.

Actually, the origin of the “Puttanesca” is well known. As a matter of fact
there is a restaurant in Rome called “La Punesca,” which where the dish
originated. In its beginning, the restaurant was frequented by pimps and
prostitutes. The word “puttanesca” refers in fact to “puttana” meaning
prostitute, with the idea that the dish is supposed to be “quick and
spicy.” Today, the restaurant is famous for waiters and customers swearing
at each other. Get your facts straight madam.

@yellowsaffron It’s a joke, haha. It’s a reference to the movie, ‘A series
of Unfortunate Events’, where the children in the movie make this recipe
for their uncle. And he responds with, ‘And where is the roast beef?’ where
then he rants at them about how he doesn’t care about Spaghetti, but roast
beef.
@alwayztubin Looks pretty simple to me! Only takes about 20 minutes.
therein lies the problem. most packages times are way too long for al
dente. usually a few minutes excessive since you will be cooking it further
in a sauce.

Meatballs:
3 1/4 tablespoons minced shallot
3/4 tablespoon chopped garlic
1 tablespoon extra-virgin olive oil
1 pound ground beef
3 1/4 tablespoons heavy cream
1 egg
1 1/2 tablespoons tomato paste
1 tablespoon port wine
1 pinch fresh ground pepper
1 pinch salt
3 1/4 tablespoons Parmesan
2 tablespoons bread crumbs
Angel Hair Piles:
2 tablespoons butter
3 tablespoons all-purpose flour
2 cups heavy cream
1/4 cup Parmesan
2 tablespoons white truffle oil
6 ounces cooked angel hair pasta
Sea salt and fresh ground pepper
Fresh oregano leaves
Preheat oven to 350 degrees F.
To make meatballs: Saute shallot and garlic in olive oil and let cool. Combine all ingredients together and mix well. Scoop into 1-ounce meatballs and shape by hand. Place on a sheet pan and bake for 6 to 7 minutes. Remove from the oven and let cool. After meatballs have cooled, trim off the top and bottom so that the meatballs lay flat and the pasta piles can rest on top.
To make the Angel Hair Piles: Melt the butter in a heavy bottomed saucepan. Add the flour stirring continuously. Cook for 2 to 3 minutes on low heat. Add heavy cream while constantly whisking. Turn off heat once the cream starts to boil and thicken. Whisk in cheese. Gently mix the cream sauce and the truffle oil with the pasta and season with salt and pepper. Using a cocktail fork or fondue fork gather about 10 to 12 strands of pasta and roll into a pile small enough to fit on top of each meatball.
Preheat oven to 400 degrees F.
To assemble: Place each pile of pasta on a meatball. When completed, cover and heat in the oven for 2 to 3 minutes. Place on a serving tray and garnish with small oregano leaves.
I know you said you wanted it to be home made, but if for whatever reason you decide to give jarred sauces another chance, you should try one of the Emeril sauces- all of his varieties are pretty good.
Next time youre at the store pick up the packet of spaghetti seasoning (by the packs of gravies and stuff) a can of tomato paste.. follow the direction on the package and serve with some lightly parmasian seasoned fried chicken breast..
