Question by meowmeow: Can I can spaghetti sauce that has meat in it?
My family’s spaghetti sauce has vegetables, tomato juice, tomato paste, ground beef and spices in it. Can I can it with the meat in, or should I can the sauce minus the meat and leave instructions to add the cook ground beef later?
What would you say the shelf lives would be on both meat and no meat?

  1. Yes you can, can it.

Basically you can can whatever you want to.

Over here we actually have canned Spaghetti Bolognnaise.

  2. If you can meat of any kind, you must use the pressure canning method in a pressure cooker/canner. If you can the sauce without meat, then you can use the hot water bath method. It’s very dangerous to can meat using the hot water bath method because it doesn’t properly sterilize the contents for storage at room temperature. Properly canned, the shelf life should be at least a year for either meat or non-meat.

  3. Shelf life for home canned foods is extensive as long as it is properly sealed. I would can it without the meat for the sake of time and taste. The processing time without the meat is short with a pressure canner and can be done in a boiling water bath. With the meat the time will increase to more than an hour in a pressure canner and cannot be safely done in a water bath.
