Question by belle2413: What is a healthy pasta dish with a basil pesto sauce?
I have a basil pesto sauce and want to make a healthy vegetarian pasta dish. Any ideas?

I’m not really sure if any of these are healthy, but this site has a bunch of pesto recipes and will probably have some basil pesto ones. Hope it helps.

  1. You can just add some steamed broccoli and fresh halved cherry or grape tomatoes to the pesto sauce. If you eat dairy- a great combination is pesto, blue cheese, and toasted walnuts. I found the recipe 3 years ago in The Dinner Doctor by Anne Byrn and I have the pasta at least once a month. I toast the walnuts in the oven on a baking sheet- doesn’t take but 7-8 mins- as soon as you smell them, they’re toasted just right.

    This simple recipe is bursting with the flavors of summer. You must make it only when tomatoes are ripe, sweet, and tender.

    Serves 4
    1 pound linguine
    2 tomatoes, seeded and chopped
    1 10-ounce container basil pesto
    1/2 cup toasted pine nuts
    1/2 cup grated Parmesan cheese

    1. Bring large pot of water to a boil and cook linguine according to package directions.
    2. Meanwhile, in serving bowl, place tomatoes and pesto. When linguine is cooked al dente, drain well and add to serving bowl. Toss gently to coat pasta with sauce. Sprinkle with pine nuts and cheese and serve.

    Easy Artichoke Pesto Pasta

    Ingredients (use vegan versions):

    1 lb box shaped pasta (ziti)
    1/3 cup chopped pecans
    3 cloves garlic minced
    juice of 1/2 a lemon
    1 can artichoke hearts in water, drained and chopped
    8 fresh basil leaves chopped
    2 tablespoons fresh parsley chopped
    2 tablespoons nutritional yeast
    1/4 cup olive oil
    salt and ground black pepper to taste
    1/4 to 1/3 cup reserved pasta water

    Directions:

    Simple pasta dish with a no-cook creamy sauce.

    Cook pasta according to directions (cooking with some salt and olive oil). While pasta is cooking, begin sauce by pulsing pecans and garlic in a food processor until finely chopped and blended. Add the remaining ingredients through salt and pepper and blend until it becomes a smooth sauce. Taste and adjust salt and pepper as desired. Reserve some pasta water before draining pasta. Drain pasta and put it back into the pot it cooked in. Pour the sauce over the pasta. Stir together adding pasta water as needed to thin the sauce to cover the pasta and keep sauce consistency creamy. Serve immediately.

    Makes: 6 servings, Preparation time: 15 minutes, Cooking time: 15 minutes

    Pasta Greco
    Ingredients

    1 pkg frozen spinach, thawed
    8 oz feta cheese
    1/2 cup julienned, sun dried tomatoes (packed in oil preferred)
    1 pound linguine
    1/2 cup extra virgin olive oil
    1 clove garlic, sliced thin
    Directions

    Bring 4 quarts of water to a boil in a large pot
    Squeeze water out of thawed spinach
    Heat 1 Tbs olive oil in a skillet over medium-low heat
    Add the garlic and cook for just a minute (do not let it brown)
    Add spinach and heat through, keep in pan
    When the water boils and add all the pasta at once and stir well
    Cut feta into small pieces if necessary, put into pasta bowl (a microwavable bowl is best)
    Add tomatoes and remaining olive oil to feta cheese, mix well
    When the pasta is cooked al dente drain and add immediately to the cheese mixture
    Add spinach and garlic, mix well
    Serve immediately
    Note: The heat from the pasta and spinach will melt the cheese. If it doesn’t melt enough pop it in the microwave for a minute. You can add extra oil if it looks too dry. Be careful. This dish can get heavy if you go overboard with oil

  4. saute some mushrooms, small tomatoes, onion and GARLIC together… you can add a handful of spinach if you want… toss in some cooked speghettie noodles and fresh parmeson cheese.. add your pesto sauce. YUM.

    OR instead of pasta use foccacia bread or french bread is ok and slice off top so that you have a base for pizza… smear with pesto sauce add the sliced veggies of choice top with mozz. bake in oven until cheese is bubbly and starting to brown.
