Question by Ravenclaw Alumni: Recipe calls for 1 medium chopped butternut squash. How many cups of squash should that be?
I’ve never cooked with it before and I’m guessing the one I bought is large, so I don’t know how much to use. Please help, it’s for thanksgiving, so I don’t want to mess it up (it’s butternut-tomato soup). Thanks in advance for your answers!

I would say roughly two cups

  1. I just made pumpkin pie and it called for 1 and a half cups
    of pumpkin. I actually used a small sugar pumpkin about the size of a mediam butternut squash. I got 2 and a half cups out of it. Don’t worry, its hard to mess up a soup. Just adjust accordingly.
