I went out to my garden earlier and I went to pick my ripe red tomato and when I looked inside it, the seeds were green and in little green sacks. What’s wrong?

It could be the variety you have planted and that variety has green seeds or it is because your tomato is not ripe yet. Generally tomatoes ripen from the inside out, except for cherry tomatoes.
