Question by ★single serving friend★: Other than breading & frying them, what else can I do with green tomatoes?
I was out in my garden yesterday & found some green tomatoes on the ground. They’re *really* green, so they’ll probably rot before they ripen in the window. I remember coming across a recipe for green tomato bread last summer, but it didn’t seem too yummy. Does anyone have any good ideas aside from fried green tomatoes?

2 teaspoons powdered ginger

Combine vinegar, sugar, dry mustard, ginger, and turmeric in a large kettle. Put mustard seed, celery seed, and pickling spices in a 6-inch square of cheesecloth or cheesecloth bag. Tie ends or gather and tie string and add to the kettle. Bring the liquid to a boil and simmer for 30 minutes. Add vegetables and return to simmer for 30 minutes longer. Discard spice bag. you can pickle them like cucumbers. My mother used to call it end of the garden pickles and anything that was small and not going to ripen before frost got stuffed in a jar. It was my favorite thing too. Baby carots, baby cukes, baby green tomatoes, immature green peppers, tiny zuchini, anything, all nice and pickled with plenty of garlic, dill, and spices. Delicious.
My mom makes green tomato relish with them.
You can blend them in a wholesome carrot salad.
