Question by Denise: Can I chop giant zucchini & green tomatoes 5+ hours before I fry it?
How would I store it?
Im making a huge meal and want to cut some corners.

I’ve gotten to the age where my personal energy flags as the day wanes–so I do all my “side work” like veggie cutting etc., when I’m fresh in the morning and bag each ingredient separately in a zip-lok and put in the fridge until assembly and cooking time. Makes clean-up easy since you’ve got all the bits, peels, cores & such in the bin and you can be quite professional by having your prep done so you can be a shining star on the stove. Huge meals require huge ingenuity…get the scut-work done, bag separately, store in fridge, and kick back until showtime! The only veggie you can’t pre-process this way is of course the irish potato which metabolizes or whatever and gets really ugly unless put in a pan of cold water after peeling. Wish I had some of those green tomatoes [deep sigh]. Betcha you found that giant zucchini hiding out under those big leaves in the garden! Big surprise, right?

You will probably be ok with the courgettes as they will not weep their seed as much as the tomatoes will.
With the bowl of both foods it will depend on how they are going to be cooked whether you include the seeds.
All I can suggest is to make sure your knife is sharp as it is far easier to use.*

sure! I put veggies for frying like the zuccs in lightly salted water in gallon ziplock bags and stash in fridge maybe a day before a big crowd is due for a meal! just slice or chop the tomatoes and stash in gallon ziplock bags in fridge!
I shred cabbages and put it dry in ziplock bags as well. Or I use the very nice preshred mixtures!
I make the dressing but stash it in fridge separately so the cabbage doesn’t wilt.
