I’m looking for a tomato soup recipe that does not include butter, cream, and meat.

tomato soup (#1)
1 qt Tomatoes
3 sm Onions; chopped
1 pt Water
Salt & pepper to taste
Butter the size of a walnut
pn Baking soda
Soda crackers
Put tomatoes, onions and water in a kettle and
stew for about an hour. Remove from stove and
strain through a sieve. Put back into kettle and
add salt and pepper, butter, soda and milk. Bring
to a boil. Crumble in soda crackers and serve. You
could simply open a can of Campbell’s, but this is
really better.
tomato spinach soup (#2)
3 1/2 cups chicken broth
1 can (14.5 ounces) sliced stewed tomatoes
12 ounces V-8 juice
1 can (10 1/2 ounces) tomato soup
2 teaspoons sugar
10 ounces frozen chopped spinach, thawed and squeezed dry
dash fresh ground nutmeg
salt and pepper to taste
PREPARATION:
Combine chicken broth, stewed tomatoes, V-8 juice and soup in a saucepan over medium heat. Blend well. Add remaining ingredients. Heat over medium-low heat until hot and spinach is tender.
Serves 6.

Creamy Tomato Soup w/ Grilled Cheez

Soup recipe from Veganomicon, the cheez is cheddar style "rice slices."
2 tablespoons margarine
1/2 onion — chopped
1 carrots — peeled and shredded
1 can (14 1/2 ounce size) tomatoes, canned
1 can (14 1/2 ounce size) tomatoes with green chilies
1/3 cup chopped fresh basil (or to taste) — lightly packed
1/2 teaspoon sugar
1 cup chicken broth
2 tablespoons Italian bread crumbs
sour cream — optional
Directions:
In large saucepan, saute chopped onion and shredded carrots in margarine until onions are soft. Add tomatoes, basil, sugar and chicken broth. Simmer, uncovered, about 5 minutes.
Place tomato mixture in small batches in blender or processor and process the mixture until lightly pureed. Return to saucepan and stir in the Italian bread crumbs.
INGREDIENTS
2 large tomatoes, chopped
1/2 cup chopped onion
1/2 teaspoon white sugar
salt to taste
ground black pepper to taste

2 tablespoons all-purpose flour
2 cups milk
DIRECTIONS
Simmer tomatoes, onions, sugar, and salt and pepper. Once onions are soft, strain. Set liquid aside.
In a saucepan, melt the butter or margarine. Stir in the flour. Whisk in the milk, and cook until thickened. Slowly add the reserved tomato liquid, and gently heat. Serve hot.

You could also just buy tomato juice and add onions, a little milk and some spices, like salt, pepper, basil and oregano.
That would make the healthiest of all tomato soups.
TOMATO BASIL SOUP
1 tablespoon olive oil
2 teaspoons minced garlic
1/4 cup minced onion
1/4 cup tomato paste
1 quart chicken broth
1 cup diced tomatoes
2 teaspoons dried basil
1/2 teaspoon dried marjoram
1/4 teaspoon dried oregano
1/8 teaspoon dried thyme
1/4 cup dry white wine
1 bay leaf
In a large saucepan over medium heat, cook garlic and onion in oil until onion is translucent. Stir in tomato paste and cook until the color is rusty. Pour in chicken broth, and stir in tomatoes, basil, marjoram, oregano, thyme, bay leaf and wine. Bring to a boil, then reduce heat and simmer 30 minutes.
Fresh Tomato Soup
* 6 medium sized tomatoes or about 2 pound Italian plum tomatoes
* 1 onion, chopped
* 1 stalk celery, chopped
* 2 cups broth or water
* 1 tablespoon tomato paste
* 1/2 teaspoon dried basil
* 1/4 teaspoon freshly ground pepper
* 1/2 teaspoon salt
Cut tomatoes into thin wedges and place in 1 1/2 quart saucepan with all ingredients.
Simmer uncovered for 30 minutes.
Strain to remove tomato skins and seeds.
Adjust seasonings. Serves 4-6
