I would make an alfrado (white sauce)
Olive oil, fresh garlic, black olives and just enough water ( 1/8 cup to 4 oz. of oil ) to keep it from frying the pasta. Fresh, chopped basil is excellent too.Freshly grated parmesan cheese makes it MMMMMMMMMMMMMMMM.
Pasta Sauce (No Tomato, No Peppers)
For Pasta, Pizza, etc
3 Tbs olive oil
1/2 cup minced red onion
1 cup shredded carrot
3 cloves garlic, peeled and minced
1/4 cup fresh basil (or 4 tsps dried)
1/4 cup fresh oregano (or 4 tsps dried)
6 oz frozen veggie burger crumbles, thawed (optional)
1/2 cup red wine, or water
1 cup tomato-free vegetable broth
1/4 cup soy Parmesan cheese
Salt to taste
In a frying pan, heat oil over medium heat. Add onion and carrot, and saute` until vegetables are soft. Add garlic, and saute` 1 minute. Add remaining ingredients, and simmer, stirring, 5 minutes.
Puree in batches in food processor until almost
smooth. Add additional broth if mixture is too thick.
Store in fridge.
Use on pasta, pizza, meetballs, etc.
Well you could have a cheese sauuce but if you fancy something with veg then fry some onions, garlic, peppers and courgettes season with salt pepper and basil fry until soft, pop in the blender with a squeeze of lemon juice, also add a chilli if you like spive and then serve with fresh pasta and lots of cheese.
You can make a very good spaghetti sauce in several different ways …
Try ‘steak spaghetti’ (you may substitute hamburger, but it’s really tasty made with steak) …
Cut chuck roast or chuck steak into bite size pieces and brown lightly in a pan. Add 1/2 cup red wine and simmer for an hour. Add freshly sliced garlic, Italian seasonings, and cook another hour (leave the lid off and set it at its LOWEST heat, so the wine will cook ‘down’ and not ‘boil off’) then right at the end add fresh basil. Make your spaghetti or pasta, and serve this over the top. YUM.
You can also make any ‘alfredo’ sauce using cream and freshly grated parmesan, romano, or asaigo cheese, or you may make a Pesto sauce by adding 1/2 cup wine to fresh pesto sauce and adding cheese (as above), or you can make a ‘Fresco Sauce’ with sliced zucchini and summer squash, bell pepper (any color, and mix them for good ‘looks), baby corn, fresh basil, fresh oregano, fresh garlic, and 1/2 cup white wine, simmer until the wine ‘cooks down’ and picks up the flavor of the vegies and the herbs.

Alfredo Sauce-
Ingredients:
* 1/2 cup sweet butter
* 2 garlic cloves, minced
* 2 cups heavy cream
* 1/4 teaspoon white pepper
* 1/2 cup grated Parmesan cheese
* 3/4 cup mozzarella cheese
* 1 (12 ounce) box angel hair pasta
Directions:
1. Melt butter in medium saucepan over medium/low heat.
2. Add the garlic, cream, white pepper and bring mixture to a simmer.
3. Stir often.
4. Add the Parmesan cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth.
5. When sauce has thickened add the Mozzarella cheese and stir until smooth. STIR FREQUENTLY.
6. While the sauce cooks, boil noodles for 3-5 minutes.
7. Place pasta on serving plates and spoon sauce over pasta.
