Question by Wundt: What to do with old cherry tomatoes?
I bought a big tub of cherry tomatoes at Costco, they are good but started to get soft and wrinkly before half the tub was gone (no mold or rot). Now, I have about 1lb of cherry tomatoes that still taste okay, but no one wants to eat.

Any good suggestions or recipes on what to do with them? Most of the recipes I looked at want peeled tomatoes, I would rather not try to peel a couple dozen cherry tomatoes.
Most soup recipes want them peeled.

Tomato soup!!!!!!! Since you have lots of them, it’ll be good to make soup out of them.

  1. I was in a similar fix the other day and made this substituting the cherry tomatoes for the tomato slices in this recipe. I probably used about 3 cups of halved cherry tomatoes to cover the top of the casserole. My husband absolutely LOVED it.

    Tomato Mac and Cheese

    Cook Time: 55 min
    Serves: 6 servings

    Ingredients
    •4 tablespoons butter, plus more for baking dish
    •2 cups uncooked elbow macaroni
    •2 tablespoons minced onion
    •4 tablespoons flour
    •1 teaspoon salt, plus more for seasoning
    •3/4 tablespoon dry mustard
    •1/4 teaspoon paprika
    •2 cups milk (or 1 cup milk and 1 cup sour cream)
    •3 cups shredded Cheddar, divided
    •2 ripe tomatoes cut into 1/2-inch thick slices
    •Freshly ground black pepper
    •1 small can diced green chiles (optional)

    Directions

    Preheat the oven to 375 degrees F. Lightly butter a 13 by 9 by 2-inch baking dish.

    Bring 6 cups of salted water to a boil over high heat. Add the macaroni and cook until al dente. Drain and set aside.

    Melt the butter in a large saucepan, over medium heat. Add the onion and cook, stirring constantly, until tender. Add the flour, salt, dry mustard, and paprika; mix well. Stir in the milk and cook until thickened, about 5 minutes. Add 2 cups of the shredded cheese and stir until melted. Toss in the macaroni and pour into the prepared dish. Cover the macaroni with tomato slices and season salt and pepper, to taste. Bake for 35 to 45 minutes. The last few minutes, top with the remaining cheese and return to the oven until the cheese melts. Serve hot.

    PS: I ignore any recipe that says to peel the tomatoes. It really doesn’t make any difference whatsoever.

  2. When my mom has a bumper crop of tomatoes she makes homemade tomato sauce and freezes it. It becomes the base for chilis and sauces all winter. All you have to do is cook the tomatoes in a big pot and season it up a bit. The tomatoes will cook down and release all their water and juices. You will have seeds and the peels left in there but these can be easily strained out before the sauce is stored.
    That is how you make tomato soup too. You don’t sit there and peel a bunch of tomatoes you just cook them and strain that stuff out.

  3. Make a Salsa
    Take a hand at making your own marinara or spaghetti sauce
    Make a Caprese Sandwich, just “mash” your tomatoes a little bit on some sour dough bread, add tomato, basil, fresh mozzarella, salt & pepper and eat it that way, add a balsamic vinaigrette or broil it a bit for some crunch and melted cheese.

    Even If a recipe calls for peeled, you can most certainly use unpeeled.

  4. Make a sauce to use for vegetarian or meat sauce for spaghetti pasta.
    I would fry the following in a non stick fry pan with 1 tbsp Olive oil
    1/2 chopped onion
    add 8 -9 chopped mushrooms
    1 chopped sweet red or green pepper
    your cherry tomatoes +1 small 5 1/2 oz can tomato paste
    1 cup water
    1 tsp oregano
    1 tsp basil
    1 tbsp honey
    1/2 tsp granulated garlic powder
    stir & taste sauce while cooking for flavor.
    1 Tbsp grated Parmesan cheese added will be very good for taste, but it is optional.
    Cook for about 45 minutes on simmer (low burner)until ready.
    This mostly home made sauce will work as a spaghetti sauce with or without browned ground meat or other added vegetables with pre boiled and drained pasta.
    Can be used as a topping sauce for pizza snacks on pita or bagels with Mozzarella cheese melted on top. Just heat them in a 350 degree oven about 4 minutes or a microwave for 1 minute to melt the cheese topping .
    It’s just a good simple tomato sauce .
