Question by Everybody’s best friend!: I need a yummy pasta salad recipe?
I’m making the pasta salad for my wedding reception and I need a really good pasta salad recipe. I know how to make regular pasta salad with Italian dressing and was hoping to try a new dressing or experiment with creative ideas!
I would like the ingredients to include the following, just so you know the flavor I’m looking for:
– Gobetti Pasta Noodles ( Curly noodles )
– Tomatoes
– Onions
– Cilantro ( to taste )
“Maybe’s”
– Small chunks of ham
– Cucumbers
– Fresh Lime Squeeze
I don’t mind if its a creamy white dressing or a zesty “clear” dressing. Anybody make any crazy concoctions lately??

Southwestern Pasta Salad
1/2 (16 ounce) package rotini pasta
1/3 cup vegetable oil
1/4 cup fresh lime juice
2 tablespoons chili powder, or to taste
2 teaspoons ground cumin
1/2 teaspoon salt
2 cloves garlic, crushed
1 1/2 cups whole kernel corn
1 (15 ounce) can black beans, drained and rinsed
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1/2 cup fresh cilantro leaves
1 cup chopped roma (plum) tomatoes
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a large bowl combine oil, lime juice, chili powder, cumin, salt and garlic. Stir in pasta and set aside to cool to room temperature, stirring occasionally.
Stir in corn, beans, green pepper, red pepper and 1/2 of the cilantro leaves. Spoon onto a platter and garnish with tomatoes and remaining cilantro. Serve chilled or at room temperature.
Mom’s Best Macaroni Salad
“This is, by far, the best macaroni salad I’ve ever put into my mouth. It has a perfect blend of sweetness and tartness, and it is so pretty with all of the multi-colored veggies. Be ready for this to disappear before you put it on the table! I have six children, and it is all I can do to keep them from nibbling on it while I’m mixing it up!”
* 16 ounces uncooked elbow macaroni
* 4 carrots, shredded
* 1 large red onion, chopped
* 1/2 green bell pepper, seeded and chopped
* 1/2 red bell pepper, seeded and chopped
* 1 cup chopped celery
* 2 cups mayonnaise
* 1 (14 ounce) can sweetened condensed milk
* 1/2 cup white sugar
* 1/2 cup white vinegar
* salt and pepper to taste
Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Rinse under cold water, and drain.
In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. I usually make this a day ahead of time, and stir it occasionally to blend the flavors. The macaroni will absorb some of the liquid.

1 box shell macaroni
mayo
diced bell pepper
diced cucumber
diced tomato
2 hard boiled eggs chopped
greek vinaigrette
salt
black pepper
ground red pepper (optional)
crumbled feta cheese (oprtional)
mix the mayo & dressing to your taste — just make sure it’s not dry!!!
ALL of my family (and i have alot) devours this!!!
*** you can sub the noodles you prefer but i LOVE this recipe!
