Question by finefenian: I’m looking for a way to save green(unripened) tomatoes for use during the winter.?
I saw an article in a magazine about taking the green tomatoes and wrapping them in newspaper and keeping them covered with more papers in a cardboard box in the basement(or somewhere cool and dry) To use, take the green tomato out and place it in a window sill in the sunlight until it turns red. Apparently, they don’t taste quite as good as fresh, but better than store bought.
I’m wondering if anyone has experience with this or any information to help me? Thanks so much.

Yes as long as the green tomatoes are mature when they are harvested, you can ripen them in a dark cool place in paper bags. If you want to speed up the ripening process, put one ripe tomato in the bag with the green ones. You don’t have to finish ripening them in the sunlight. They will turn red in the dark.
Make sure that you check them every couple of days because sometimes one will go soft and you should remove it before it affects the rest of the fruit.
