  2. Try this with out grating the tomatoes. You add the salt, spices, garlic and a quarter of a cup of olive oil to the chopped tomatoes (which you can sort of mash half through your fingers) and let it sit while the pasta is cooking. I prefer fresh basil to the parsley, but that’s the Sicilian in me). I think you’ll like the result. It clings to the pasta and has a rich texture and flavor. Enjoy!

  5. Jjust made this a few hours ago! I used arugula from the garden instead of parsley and it was very tasty! It was a great way to use up some of the many tomatoes I have!
