Question by gtrplyraj: Substitute canned tomatoes for fresh tomatoes in recipes?
I have a marinara sauce recipe that calls for two 8oz cans of stewed tomatoes and one 6oz can of tomato paste. Now the farmers market in my area has started up for the spring and my parents also grow fresh tomatoes.
How many fresh tomatoes do I need to use to substitute the canned tomatoes above?

exactly thts wht i do,just skip d 1st part & add raw eggplant after tomato is done

4 tomatoes medium size per can.
Of course it depends on the size and type of tomatoes. The kind of tomatoes required for sauce is the Roma type that is used primarily for sauces because of its more concentrated flavor.
So…IF you are going to acquire fresh tomatoes to substitute for canned please buy Roma tomatoes…however to make your sauce you still need the addition of tomato paste which has a different flavor and strength.
An 8 oz. can has approx. 4-5 Romas in them…(they are small…2 1/2″-3″)
After all this, remember the goal of cooking is to learn how to make “good eats”. Use what you have. Taste as you go and you will discover as time goes on that you will not need to follow recipes so close and will be able to come up with your own delicious “recipes”!
yes i would use enough that once you dice them up it looks equivalent to the amount the recipe calls for…use juice and all… i think your hands are the some of the best utensils you have to work with so i would peeled them and hand squeeze them to make them very juicy just like stewed…stewed tomatoes are seasoned so you may want to season them as well…i would use around 3-4 tomatoes per can depending on size…

that would be a total of 16 ounces of tomatoes which is a pint or 2 cups. The 6 ounces of paste is used not only as a thickener, but for a flavor enhancer. Use 2 cups fresh cut up tomatoes with their juice and the can of tomato paste.
i’d say you can use 1-lb fresh tomatos ( peeled-either blanched-or -roasted ) as far as that now the paste you’ll need a qt.-can of sauce (as a sub ) but i’d get the paste it just has the sun dried taste to it -that is lost in tomato sauce .
