Question by Shayshay: What’s the best type of sauce for this dish?
So I’m making dinner tonight and have everything, but I think I need a sauce for the main dish, which is: baked chicken breast stuffed with spinach, sun dried tomatoes, cream cheese, another type of cheese (not sure yet so please give suggestions as well!), and a little garlic. It then will be wrapped in a puff pastry and then it’ll get all baked off! So, what type of sauce do you think would go best on top, unless you don’t think it needs any sauce at all. Thanks so much!

I don’t think I would add a sauce, but it would depend in what veggies were going with it. Pastry can be a little dry and at the start of the meal that is great, but then it is less nice, and a sauce may be needed and I would make cheese with the the ones I used.*

  2. Great vid :) I’ve been dehydrating my home grown tomatoes for several years now. If you are dehydrating only a few tomatoes, try dehydrating something else in your dehydrator along with the tomatoes to get more “bang for your buck”. I just keep a quart size baggie available for use within a month or so. For long-term storage they keep very well when stored in a mylar bag with an oxygen absorber

  5. Good question! You could defiantly dry them in the sun especially if you are in a place that has a lot of hot sun. In Northern Idaho we didn’t have enough sun to make this an easy option at the time that I did this. Drying them in a hot car is an option for using the sun:).

  9. you are probably right! Oh well, I have a feeling the ones you buy at the store that say sun dried tomatoes were not actually dried in the sun either:).

  11. @Matheny246, because I have a dehydrator I prefer to use it over my oven but to use an oven I would simply follow the same directions for time and temperature and keep a close eye on them as they dry rotating them if needed for even cooking. Good luck!

  13. I got a giggle out of Hunter too as I didn’t realize he had been peeking like that until I was editing the video! I should have known how much they would shrink up as I have dried fruit before but somehow it did catch me a little off guard after waiting so many hours for them to be done. Oh well!

  15. Sounds scrumptious. I would skip the cream cheese and use Gruyere, Assiago or Jarlsberg instead. A sauce on top if the chicken breast will make the pastry soggy. Maybe just top with shavings of the cheese you use. If your heart is set on a sauce plate your chicken breast and drizzle the sauce around the breast. I really like a Beurre Blanc (white butter) sauce with chicken, fish and vegetables – especially asparagus.

    Beurre Blanc

    In a small sauce pan on a medium high heat simmer uncovered until cooked down by 3/4
    6 tbsp dry white wine
    2 tbsp white vinegar
    3 tbsp minced shallots
    sea salt and ground white pepper to taste
    Stir in
    1 tbsp heavy cream
    Remove from heat
    Whisking constantly add
    8 tbsp (1stick) cold butter cut into at least 8 pieces, one piece at a time.
    Whisk until creamy and whitened
    If you need more heat briefly hold the pan over a low heat
    Do not let the butter melt or the sauce will separate
    Season to taste and serve immediately
