Question by karen_faustino: Roasted red pepper and sun-dried tomato soup questions.?
I am going to make roasted red pepper and sun-dried tomato soup. However, all the recipes I can find say NOT to use sun-dried red peppers that are packed in oil. Why is that? That is the kind I have. Will it ruin the soup if I use them?

You should check out vegweb.com for vegan and vegetarian dishes. It claims to have THE largets site for vegan and vegetarian recipes in the world. I beleive them. They have some very tasty recipes. Should help you on your vegan/vegetarian journey. I’ve been trying for the last 4-6 months to go vegan – I’ve only made to flexitarian. lol.

Probably. I’d have to google gazpacho recipes but I’m pretty sure they are similar, if not the same thing. Its just I want “raw dishes” so knowing I had tomatoes, my mind said to google, “raw tomato soup” and not gazpacho. But, same difference.

I most certainly do. Wholefoods. Trader Joes. Online places. And my local grocery store. They are incorporating more organic brands and more vegan and vegetarian options now!

For those not into raw food, I wonder what it would taste like heated up? Might be yummy too!
I’m NOT a tomato soup type of girl, hot or cold. And the idea of raw soups, honestly weirds me out. Most of them look like the color of vomit…like this one or my raw pea soup. But I figure I’ll never find out what other stuff I like, if I don’t try it at least once. And I was surprised with how tasty this actually was!
Your soup will separate once it is heated.
It may make your soup oily if you make a broth based soup. However, if it is a cream based soup and you thicken your soup with a roux, it will be fine and not separate.
An alternative would be to drain the sun-dried red peppers in a strainer and rinse them with cold water.
