If you could list the vegetable’s which could add variety of colors & textures, and a simple recipe for a salad dressing?

lettuce, little grape tomatoes, shredded carrots, cucumber, maybe some celery for crunch. I love to add kalamata olives and dried cranberries to mine… I usually dress with just a little olive oil and balsamic vinegar.

Radish, cherry tomatoes, boiled baby potatoes, (some hard boiled eggs cut in half if you’re not vegan), rocket, sweetcorn, beetroot and some cos lettuce leaves.
For a dressing: Put 1 clove garlic, good amount of olive oil, teaspoon honey, teaspoon wholegrain mustard and some balsamic vinegar in an empty jam jar and shake it up!
I just made this last nite-It’s an adjusted version of a dear friend of mine. Boston bib lettuce and a premixed bag of baby lettuces of all different colors.Tomatoes shredded smoked provolone cheese and bacon crumbled. Dressed it with 2 cloves of minced garlic a little olive oil and fresh squeezed lemon. (She also uses parmesean cheese salt and pepperin her dressing-and swiss instead of the provolone) Either way it’s a really good salad! It’s not often that I am tempted to use anything other than ranch!
My Mom used to do it like this, she would put the torn lettuce in a bowl, on top of the lettuce she would layer thinly sliced onions and very lightly salted chopped tomatos. she would cover it and let it sit in the fridge for 3-4 hours, allowing the onion and tomato juices to be drawn out onto the lettuce. she would toss it right before serving, and all 4 of us kids NEVER even wanted bottled dressing, the juices from the veggies was all it needed. sometimes she would layer on other additional veggies she wanted to use up like cucumbers, or green peppers,or radishes,etc
