  1. If you have grown them in small area then water might be a problem. If they dry out too often then the skins will toughen up a bit. Smaller ones will be more prone to this problem. Get the nice big Italian ones they are tough as nuts.

  2. Tomatoes like sun and air flow.

    Cutting the leaves off all around the tomatoes can make the skins more tender.

    Dry or very hot summers tend to produce thick skinned tomatoes. Lack of humidity in the air will cause the tomatoes to toughen the skins to help prevent water loss through the fruit. Inconsistent moisture levels in the soil or excessively high air temperatures contribute to the problem as the plants try to conserve moisture.
