Question by Robalobyn: some good recipes to use lots of tomatoes in?
we have like 16 tomatoes fresh from the garden and we would like to make a tomatoe recipe….please only recommend if you have tried it and it is delicious. we are already making a tomatoe pie, any other suggestions?? thanks for your help.

Cut your tomato in half, hollow out the membranes, removing the seeds. Make a mixture of breadcrumbs, butter, parmesan cheese and fill the hollowed out area. Place under the broiler and broil until golden.

  9. Make salsa. A friend of mine is canning 15 pounds of tomatoes this afternoon into salsa.

  10. I love caprese. Just grab some fresh mozzarella and some fresh basil leaves. Stack slices of the mozzarella, tomato and basil into a nice big log and toss some salt, pepper, olive oil and balsamic vinegar and you are good to go. You can stack it or cut it to a bite size salad. Awesome Summer food. if you want you can toast up some slices of french bread with some olive oil and italian seasonings or parmesan. Very easy and very good.

  11. A fresh pasta sauce is so much better than what You buy from the store.

    Exact measurements are not necessary.

    In a sauce pan add enough olive oil to coat the bottom.

    Saute some fresh diced onion green pepper and garlic until tender.

    Add fresh diced tomatoes with a dash of salt and pepper, dried parsley flakes, oregano, basil, and 1 bay leaf.

    Bring to a boil then reduce heat and simmer covered. Check and stir often until tomatoes are cooked well or starting to dissolve. Remove bay leaf when done and stir in some grated parmasan cheese. No need to over cook.

    Serve over pasta. You can add cooked Italian meatballs or sausage to the sauce.

    Or make meatball or sausage sandwiches on long crusty bread rolls, top with sauce or serve the sauce on the side for dipping. Serve with french fries, and/or onion rings, fried zucchini, or fried mushrooms. You could top the sandwiches with shredded mozzarella cheese.

  12. Tagine kefta (a Moroccan meatball dish) uses several tomatoes to stew the meatballs in, and it’s delicious. You don’t have to have a tagine (a conical, earthenware cooking vessel from the North African continent), you can use a large, low pan with a tight-fitting lid.
