It would be at a low simmer, because if you have the temperature too high it would splatter and it would dry out because too much moisture would evaporate.

well i would say med lo tomato sauce will burn if you let it boil so a low simmer is good adjust the temp as you see fit
simmer it at the lowest heat possible. if you boil it at high temperature it will burn and splatter everywhere
Low and slow… w/ lid on. Stir every now and then to prevent sticking on the bottom, esp if it has sugar in it. OR put in a crockpot, set on Low, and go to bed yourself!
