I just tried it for the first time for a tomato pasta sauce, and it gave it much more flavor than I thought it would. Does anyone know what features of the wine does this?

Wine adds a robust flavor to many things like soups and stews and even beef gravy .

There’s tons of flavors in the grapes themselves, and when the alcohol is cooked off they really just give a depth of flavor to a sauce.
I add wine to just about anything I cook. It’s not just for the taste, but (like I said) it adds a richness and complexity to any dish.
