Question by Fallon: I am making ratatouille and need a good side dish to go with it. Any ideas?
I am using a recipe for ratatouille for the first time and a lot of the websites say that ratatouille is more of a side dish than a main meal. The recipe I am using uses ingredients such as aubergine (egg plant), courgettes, yellow and red peppers, tomatoes, basil, parmesan cheese, garlic and onion. I want to serve this as a main meal but feel it may be a bit bland for those who enjoy a bit of meat in their meals. What meat or suitable side dish would you suggest instead of simply adding rice or bread? I did think of chicken or pork sausages cut up into the dish but not sure if this will work so well with the flavours of the peppers and aubergine. Please help.

I’d normally serve plain Basmati rice with it, or some good artisan bread.

I would agree that I would view this as more of a side dish than a main meal, but if you have sausages there you could squeeze the meat from the skins, divide it up in to small portions (like 3 per sausage) and roll it in to meat balls, brown them to make them tasty and cook them in with the sauce. Or you could serve it with jacket potatoes or pasta. Or you could simply bake some chicken thighs or legs and have it with that.

  2. It does tend to be more of a side than a main, Most commonly here in Europe I have seen this served with a fried/sauted/baked whole chicken breast or even fish. It is a strong tasting accomapnyment/side for a lightly flavoured protein. No additional crumbs, sauces or anything.
    However, I have also had it served on rice (plain boiled basmati) or as a filling for a jacket/baked potato… but this is was in the UK and very un-french :-)

  3. I would go for the simple meat = hamburger meat.
    Try any style potato with it or risotto rice.
