Question by Signit: Can I use a regular tomato instead of sun dried tomatoes in a recipe?
I am making an Italian meal but can not afford a $ 5 can of sun dried tomatoes, will a regular tomato work?

You can get away with it, but it won’t taste the same….if you buy the sun dried tomatoes correctly and store it right, they will last for a long time…you could get your money worth….

I love sun dried, but I prefer to make my own: You will need to start this early in the AM
Slice your tomatoes in thin slices, about 1/4″, lay on a baking pan/cookie sheet (that has sides), lined with parchment paper. Turn oven on 180-200 degrees. bake on low for 8-10 hours. Oven dried is not the same, but I find it very close in flavor and really rewarding to make my own. It is important to use a low moisture tomato like a ROMA . They are the long oval ones at the supermarket. Good Luck!
Because they’re dried and therefore concentrated you get a whole different flavor with sun dried. I’m assuming that the ones you priced are packed in oil. If you’ll look for the dry packed sun dried tomatoes instead you’ll find that they’re much less expensive. If the recipe specifically calls for oil packed tomatoes just put the amount the recipe calls for in some olive oil overnight or for a few hours.
It would help to know the recipe.
Tomatoes will add a moisture content that sun-drieds won’t. If it’s a sauce, I’d say go for it. If it’s something baked, then take into account the extra moisture tomatoes will add.
