Question by ciao: best meatball recipe ever!?
I am going to make my own meatballs and serve them with fresh pasta and a tomato sauce.
Can you suggest any amazing meatball recipes – I don’t want to use ready made ones, something special!

1 pound very lean ground beef
1 pound very lean ground lamb
1 pound bulk pork sausage
blend together very well using washed hands. Make into meat balls and roll in flour bowl.
fry quickly a few at a time in hot wok in light olive oil. drain well.

I always use the best minced beef,usually Topside and chop some basil & dried tomato finely with a little baco &onion or chives to flavour it. The amount you add depends on your personal tastes.That is my Italian meatball recipe & it would only be good with a pasta sauce such as Basil & Tomato/mushrooms etc.
I make mine using a recipe that was originally for a meatloaf- most meatloaf recipes work really well for meatballs if you reduce the liquids!
500g minced meat
1 egg
1 cup bread crumbs
1 tin diced peeled tomatoes
1 mushroom, chopped
1 onion chopped
3 tablespoons Herbs and spices (your choice here! At the moment I am in love with a pre mixed cashew Zatar blend)
place all ingredients in a bowl, mix together until well combined.
Form small balls of the mixture and fry them- alternatively (this feels quicker) you can place the balls 2 cm (just under an inch) apart on a lined baking tray and bake them in a moderate oven for 40 minutes.
I make a big batch using the baking tray method and freeze them for later use.
