Question by slayer: What else can I have with my pasta tonight?
I am making a “cheesy” mushroom spinach pasta dish using Vegetable/rice noodles. What can I have with this? Keep in mind it must be vegan and easy (things I’d already have in the cupboard). I thought of a Tempeh roll but that might be too many carbs?
I’m trying to eat healthier more balanced meals

Well do you have any veggies?…because a garden salad would be perfect. And can you get the “cheesy” off your pasta?
I love a nice salad with my pasta.
I like a nice mix of tomato, eggplant, mushrooms, zucchini, capsicum and tomato myself – but for a Cheesy pasta you cant go past this recipe:
Toast 1/2 cup pine nuts – lightly in a saucepan (only takes about 1 min so dont burn them!) then cook up your pasta – id go with a fettuccine – then you saute 1 onion in olive oil and add 3 cloves garlic – smooshed. Put the cooked garlic/onion mix into a blender and add 1/2 cup veggie broth, 2 tsp yellow mustard, toasted pine nuts, 2 tsp soy sauce, 2 tsp chile powder, 1 cup nutritional yeast flakes and
at least 1/2 tsp salt and a grind of pepper. blend for a while until the pine nuts are ground up and it starts to go creamy-looking. If you want it extra cheesy add extra Nutritional yeast. If it looks to thin after this you may need to add some soymilk or water a little at a time.
Pour the “cheesy” sauce over your pasta and mix through.
Now heat your pan again and stir-fry some sliced mushrooms, sliced capsicum, ribbons of zucchini and add a few more pine nuts.
Serve with the pasta on the bottom with the vegie mix in the middle on top.
