Question by BB: Has anyone been able to copy Bakers square tomato basil soup?
I’ve been trying to come up with a recipe for this, just wondering if anyone has come close.

Tomato Basil Soup

Ingredients:

3 Tbsp. butter
1 large onion, sliced
1 large carrot, grated
4 large ripe tomatoes, peeled, seeded and minced
1/2 cup lightly packed fresh minced basil
3/4 teaspoon sugar
1/8 teaspoon ground white pepper
1-3/4 cups chicken broth
Salt to taste

Directions:

In large stock pot, heat butter and cook onion and carrot, stirring frequently. Stir in tomatoes, basil, sugar, and white pepper. Bring to boil, stirring constantly. Reduce heat and simmer for 10 min covered. Cold slightly. Pour into blender or possibly processor and puree till smooth. Return to pan and stir in broth and salt. Heat to steaming. Serve in individual bowls and float a thin lemon slice and basil leaf on top. Serve with pasta salad for a summer lunch.
