Tomatoes are juicy and delicious.It is believed that if you eat tomatoes daily then its very good for our skin. There are so many health benefits of eating tomatoes regularly.You can cook so many different recipes that include tomatoes. Name of few interesting recipes which contain tomatoes are Tomato Basil Toast, Chicken Tomato Soup, Tomato Coconut Rice and Tomato green chilly pizza. These all recipes are my favorite and i regularly cook it on my weekend.

Baked Tomatoes with Mint and Basil
Recipe Type: Tomatoes, Mint, Basil
Yields: 4 servings
Prep time: 15 min
Cook time: 25 min
Ingredients:
4 medium-size firm ripe tomatoes, halved and seeded
1/2 cup extra-virgin olive oil, divided
2 garlic cloves, minced
5 to 6 fresh mint leaves, finely shredded
1/2 cup loosely-packed and finely-shredded fresh basil leaves
Salt and freshly ground pepper
Preparation:
Preheat oven to 350 degrees F. Place tomatoes, cut side down, on paper towels to drain excess juices. Using a muffin tin, cover the bottom of the cups to be used with some of the olive oil.
In a small bowl, combine the garlic, mint, and basil with a few drops of olive oil. Place tomato halves in muffin cups; sprinkle the salt and pepper over the tomatoes. Divide the herb mixture between the tomatoes, placing the mixture in the tomato cavities. Dribble the tops lightly with remaining olive oil.
Bake 20 to 25 minutes or until the tomatoes are soft and the tops are lightly browned. Remove from oven.
Serve hot alongside meat or fish, or at room temperature as an appetizer.
Makes 4 servings.

Linguine with Tomatoes & Basil
Recipe Type: Pasta, Tomato, Basil
Yields: 4 to 6 servings
Prep time: 20 min
Cook time: 30 min
Ingredients:
6 very ripe large tomatoes, peeled, seeded, and cut into bite-sized pieces*
1/2 cup extra-virgin olive oil
1 cup fresh basil leaves, cut into strips
1 cup freshly-grated parmesan cheese
3/4 cup sliced black olives
1/2 cup sliced pimiento-stuffed green olives
4 cloves garlic, minced
Salt to taste
1 teaspoon coarsely-ground pepper
1 (16-ounce) package uncooked linguine pasta
Freshly-grated parmesan cheese

Preparation:
Tomato Basil MixtureIn a large bowl, combine tomatoes, olive oil, basil, parmesan cheese, black olives, green olives, garlic, salt, and pepper; stir until blended. Cover and let stand at room temperature 2 hours.
Cook pasta according to package directions; drain and return to pan. Learn How To Cook Pasta Properly.
Add tomato mixture and toss to coat thoroughly. Transfer onto individual serving plates and garnish with additional parmesan cheese.
Makes 4 to 6 servings.
In many cases you can either cook meals to include tomatoes or serve them as a side.
I like to eat fried tomatoes with a steak, or add to fried rice as a couple of ideas.
