okay, so i have a garden and an abundance of fresh tomatoes. what can i do with all of them?

macaroni:
1 1/2 cup boiled macaroni, 1/2 chopped tomato, 1/2 chopped onion,olive oil, salt and peper
heat the chopped onion till golden brown and then put the chopped tomato for 2 minutes and then put the salt and peper and the macaroni

*Caprese Salad* (serves four)
Ingredients
-Three large tomatoes (or four medium ones)
-One fresh mozzarella ball (found in cheese section @ grocery)
-Fresh basil(about 1 3/4 cup, NOT CHOPPED)
-Extra virgin olive oil (EVOO)
-Balsalmic Vinegar
Directions
Cut each tomato into about 4-5 slices. Lay one piece of tomato on a plate. Slice a piece of cheese off of the mozzarella ball, and lay on top, letting the tomato peek out about halfway. Key is to gradually build it into a circle around the plate.Then, lay a basil leaf on top. Repeat until all slices of 1 tomato are gone. Repeat for all others. Then, whisk together the balsalmic vinegar and E.V.O.O. until blended as well as desired. Drizzle on top. Finished product should look like the pic at the link below.

Freeze them. It’s much easier than canning. Boil a large pot of water. Wash the tomatoes and cut an X on the end not having the stem. Add the tomatoes to the boiling water, a few at time and remove them within 30 seconds. Place in a bowl of ice water and peel off the skins. Remove from Ice Water and put about 4-6 tomatoes in a zip lock bag or freezer container with a clove or garlic and few basil leaves. Freeze until needed. You can, of course freeze the tomatoes in whatever size batches you feel you will use most frequently.
You can also make a marinara sauce and freeze that in batches.You will still need the peeled tomatoes.
Sorry, I really don’t have many recipes with measurements. Saute minced onions, garlic celery and carrot in a couple of tablespoons of hot olive oil. When soft, add your peeled tomatoes, salt & pepper to taste, and continue cooking over low heat, until the tomatoes break down. Finish with some finely chopped fresh parsley and freeze. If you like a smoother sauce, you can give the tomatoes a few whirls in the food processor, before adding to the sauteed vegetables, or allow the sauce to cool and process in food processor or blender until smooth.

Huge tomato salad – less lettuce, more tomato, avocado, and any other veggies you like and your favorite dressing. Even BLT, Tuna sandwich with sliced tomatoes
Caprese Salad
1 large tomato, sliced 3/4 inch thick
1 ball of fresh mozzarella cheese, sliced
Enough fresh basil leaves for each slice of tomato
1 tablespoon extra-virgin olive oil
2 tablespoons balsamic vinegar
Place the slices of tomato on a plate or shallow baking dish. Top each slice of tomato with a slice of fresh mozzarella. Sprinkle the basil over the salad and drizzle with olive oil and balsamic vinegar. For a real treat add sliced figs to it.
