Question by honey: Ketchup or diced tomatoes?
I’m making meatloaf and I came across a recipe that calls for diced tomatoes instead of ketchup, Does anyone know if diced tomatoes taste better in meatloaf than ketchup? ,,,, I don’t have time to try both so what should I use?
1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats

no they do not ,i am a chef and would put ketchup rather then tomatoes becuase of the sour taste of tomatoes

i love tomatoes. i say u follow the recipe, it sounds very good.
I never have but I would try it and if it seems dry add a little—-and then you could put some on top of the meatloaf before and after you bake it.
I mean ketchup when I say add a little or put it on top.
I seriously would be nervous to not use ketchup in meatloaf and what is up with the gravy–I never use gravy for meatloaf it just doesn’t seem natural to me.
It actually depends. Are the tomatoes going into the meatloaf mixture or on top? Ketchup in a meat loaf recipe is usually brushed on top so it forms a glaze on the top of the meatloaf as it bakes. I would not recommend putting the tomatoes on top the loaf as it may burn, because meatloaf bakes for a long time in the oven.
Also that recipe for meatloaf is pretty bland. There are no real seasonings. try adding some minced, garlic, fresh parsley, fresh basil and cayenne pepper.

I always did with ketchup at least that is the traditional meat loaf.
Suggestion… if you like bacon you should add strips of it on the top, the fat from the bacon will make the meat loaf moist and it will add a nice flavor to the meat loaf.
i don’t like to eat bacon but i do put it on mine just for the flavor
if you can… get thicker slices and peppered from the deli.

I like using spaghetti sauce in and on my meat loaf. It will not dry out as much. Give it a try. Just use 1 cup in the meat mixture, then after it has cooked about 1/2 way pour the rest of the sauce on top of the meatloaf.
I prefer ketchup, but I say try the recipe and if you don’t like it, next time use ketchup. I think it will be okay. If to soupy add some parmesan cheese and you might want to add about 1 tsp of sugar to off set the acidity of the tomatoes. Ketchup is sweeter then tomatoes, something to consider.
no diced tomatoes are not better than ketchup. i think you should just use ketchup. don’t take a risk and ruin meatloaf with diced tomatoes
