Question by IDWaN: I want to make a sun-dried tomato cream sauce for a chicken and pasta dish but I have no cream. Will milk work?
I was thinking I could saute some onions, garlic, sun-dried tomatoes, and some red pepper flakes and then add in a bit of chicken stock and milk and then flour to thicken it a little bit. Would this turn out okay?
I don’t have a processor.

I’d add butter too. Idont know how to cook though.

  1. You can use milk but you have to use more of the milk and maybe more of the other ingredients coz to get the effect from using cream you need to reduce the whole thing longer then with using cream.
    The consistency could be almost the same if you do it that way.
    Careful with the flour, if you use to much of it, it can be a real flavour killer….
    p.s. a stir in a bit of fresh lemon juice but while the whole thing is almost at a boil otherwise it will get the milk flaky.
    the bit of lemon will taste great with the dried tomatoes :-)

  2. I woundn’t replace cream with milk for that dish

    I would switch to an olive oil based sun dried pesto and skip the cream. Just process some garlic, sun dried tomatoes, salt and peppers. Put it in a pan and thin it out with chicken stock to the desired consistency and then toss with the pasta.

  3. Make a Béchamel sauce and blend all your other ingredients in.

I always use milk instead of cream for sauces. its healthier. make a rue first which is equal parts of flour and butter. cooked and stirred. then add a little milk at a time as to not make it lumpy. you could also use corn starch to thicken it. I prefer to use that as it doesn’t leave clumps. it can work! it will taste great. sometimes you just have to let it reduce a little bit to get the same consistency of using cream! good luck! im sure it will be great!
