Question by MissM: We’re having chicken fajitas for supper. What should I serve with them?
I am craving chicken fajitas, so I plan on making some for our supper. Should I make anything to go along with the fajitas or are they fine on their own? I am planning on serving with grilled peppers and onions, cheese, lettuce, sour cream, and diced home grown tomatoes. No guacamole, we’re not big fans.
Also, I haven’t really found any spanish rice recipes that I like, so I don’t think that I will be making rice as a side dish.

rice n beans (GOYA pre made box is good) and nachos with cheese or chips n salsa

They have a very concentrated “tomato” flavor, due to the lack of water. We
really enjoyed them.

Black beans, and spanish rice.
What about some beans? Or sopapillas and honey?
You really have everything that you need with the meat, tortillas and vegetables……..but, a citrus fruit salad is always good with it too:)
Skip the Mexican rice, get a box of Zatarains black beans and rice. Easy-peasy, quick and easy. And good. Or just a simple green salad maybe with manchego cheese. Those black beans and rice are also good in tortillas with some cheese.
make 4-6 servings white rice. saute some diced onion,garlic and bell pepper. add a can of whole tomatoes,juice and all. throw in a little salsa. very easy, very good. you can also put in a little v-8 juice.
refried beans is common.
there are boxxed mexican/spanish rices that arn’t bad.
salsa can sometimes be a better choice than tomatos.
keep it simple and do something like fresh tortilla chips and salsa.

Pinto beans with diced jalapenos. Black beans. Refried beans. Plain old chips and salsa. Mexicorn…corn with diced green chiles and red peppers. A small bowl of tortilla soup as an appetizer perhaps?
No rice with the wraps, too much starch. Try a sliced pineapple, that will give it a nice citrus taste.
