Ok you put water in a pot then add olive oil and salt to keep it from sticking. Cook according to the directions on the box. When it has turned a white-ish color and i soft, drain all the water out. When I cook pasta and sauce, I heat the sauce up in a separate pan so I can control how much sauce gets put on my pasta. Once the sauce is hot enough, put the pasta on a plate or in a bowl and then put the sauce on top of it. It tastes really good if you put grated cheese on top of it.
-choose any kind of pasta.
-cook it according to package directions. better off to cook -whole package at once rather than trying to figure out how to do 1/2
-drain water, reserving about 1/3 cup of liquid in a separate container
-wash pasta with either warm or cool water, drain excess water again and put back in pot. cover with lid and keep warm. you can also place a clean towel across the opening of the pan and then cover with lid, to keep the moisture in.
sometimes it also helps to coat pasta, very lightly with Olive Oil, that way it wont clump together and the sauce will stick better to it.
Pasta Sauce:
This recipe can stand on its own without the pasta sauce by adding more tomatoes or a can of tomato sauce. I’m a big garlic lover so I add extra garlic, onions and garlic pepper even if the recipe doesnt ask for it. Feel free to alter to your own tastes.
~2 glugs of olive oil or about 2 tsp
~1 clove of garlic, minced or diced, can use canned pre-made
~1 med onion, sliced or chopped
~1 can of crushed tomatoes (optional), tho any canned tomato product would work well or add real tomatoes, cubed or mashed, depending on the consistency you want
~1 jar/can of ready-made pasta sauce
~depending on taste add the following: basil, oregano, sage, any other herbs, spices, salt (very little), pepper
~optional: 1/4 cup of red wine, rose or white wine will work, but a smoky syrah or pinot just tastes better tastes better
in a large skillet, heat olive oil on med-high heat. add garlic, wait till it releases its odor, then add onion, cook a few minutes till onion is opaque. Add tomatoes, pasta sauce and basil, oregano, salt (very little), pepper, etc. and let cook for 5 min, stirring frequently. Finally add wine, reduce heat to lowest possible, cover but leave a slit open and simmer sauce for about 30 min or less, until its thouroughly heated/cooked through.
if sauce is not liquid enough, add rest of the pasta water and/or more tomato paste or even water will do.
if sauce is not thick enough, add more chunks of tomatoes, 1 tbsp of flour or cornstarch, or open lid and let liquid boil off on higher heat setting.
then either put pasta in sauce pan, stir to cover and heat for about 10 min to heat everything evenly or put desired amount of pasta in dish, pour sauce on top and mix to coat.
