Question by rdhdnrs: I grow tomatoes and I can’t get them to taste tart enough, whatever the variety. What can I add to the soil?
I love to fry green tomatoes, but mine are totally bland and don’t have the “acidy” taste I loved as a kid. I don’t know what to do!!

Add just a couple of tablespoons of potash or fireplace ashes to your fertilizer mix to give them some bite. I also use epsom salts in my fertilizer water that I give every couple of months.

Thanks. Those tangy beef rolls are one of my favorites. I’m glad they were a hit! Best regards to you…
Hi Chef Kamal!
I just wanted to say I’m Persian and I LOVE your cookbook. I made the tangy beef rolls for guests and they got gobbled up in no time. Going to take a stab at the rice and lentil recipe

One of my favorite side dishes! Thanks Chef… I grew so many beans this summer, and actually forgot about my heritage!!!! I canned most of them.
I will have to go buy some store bought beans and make this awesome dish. I had it most my life with lamb cubes… Yummy!
coffee grounds added around them turn the soil acidic which is just what you want. I know what you mean. If a tomatoe isn’t tart it doesn’t taste real. Here in Georgia we grow some humdingers with our red clay.
put some rooten cow manue into the soil make sure they get plenty of light and sun and water
mix in some potash
Start with the “Big Boy” plants. Fertilize when planting and again when tomatoes appear. If you fertilize while blooming you will only increase plant growth. Save it for the fruit.
