What is the best way to store and ripen green tomatoes? I have about 250 green tomatoes that I had to pull off the plants because of cold temps outside. I have in the past put green tomatoes in to brown paper bags to let them ripen or put them on a window sill. What is the best way to get green tomatoes to ripen.

The best way to ripen green tomatoes at the end of the season is to pull up the plant, knock the dirt off the roots and hang the plants in a cool moderately humid room. You don’t want the tomatoes to be subjected to direct sunlight or to freezing temperatures. I use my garage and in the past I have used a room in a basement. The tomatoes will ripen over a fairly long period of time; they don’t taste as good as garden ripened fruit, but they are better than what you get at the grocery store and it’s also better than throwing away a lot of good tomatoes. Since you’ve already removed the tomatoes from the plants, however, and because you have a lot of them, you can store them in boxes (1 or 2 deep), just make sure you don’t put any damaged fruits in the boxes. You can transfer them to a brown paper bag or a sunny windowsill as you need them. If you find that the tomatoes are ripening faster than you can use them, you can slow down the process by culling out partially ripened fruits each week (as they ripen, tomatoes give off a gas that speeds up the ripening process). Put them in brown paper bags with an apple in each bag. They can ripen on a window sill but the apple will speed things up a lot. However, immature small green tomatoes may not ripen at all and some tomatoes may even rot, so that is why I say put them in bags not just one. Have you tried fried green tomatoes? They are delicious. Just slice them and dip them in batter, then fry them and season them to taste. It’s a treat. And never put tomatoes in the refrigerator. It kills the flavor.
