Question by Jessica: What tomato sauce can I make with these ingredients.?
– fresh american parsley
– fresh cilantro
– chopped basil (the container from the store)
– yellow onion
– garlic
– salt, pepper
– beef tomatoes
– canola oil
– regular tomatoes
Please don’t just copy and paste a random tomato sauce recipe!
I like don’t want my sauce just to be chunks of tomato, I want it to be really smooth.

I would NOT put cilantro in a tomato sauce. A fresh salsa, yes, but not a cooked tomato sauce.
This is my fave homemade tomato sauce recipe. So authentic and GOOD!
Mark Strausman’s Tomato Sauce
–Makes about 9 cups
If you are preparing this recipe in August or September, use fresh plum tomatoes, which are at the height of their season then. Cut them into large pieces, and run them through the food mill just as you would canned tomatoes. Slow cooking will allow the skin to melt into the sauce. For canned tomatoes, Mark likes to use Italian plum tomatoes from the Italian San Marzano Valley. (“CENTO” is one brand.)
4 (28 oz) cans whole Italian plum tomatoes
1/4 cup extra-virgin olive oil
3 cloves garlic, thinly sliced
1 tsp. crushed red-pepper flakes
1 cup Chianti or dry red wine
1 Tbsp. dried oregano
8 leaves fresh basil
Salt and freshly ground black pepper to taste
Purée tomatoes in a food mill, removing most of the seeds. In a medium stockpot, heat olive oil over medium heat, add garlic, and sauté until golden brown, 1 to 2 minutes. Add red-pepper flakes. While oil is sizzling, slowly add half of the puréed tomatoes and the wine, stirring to mix. Add remaining tomatoes, reduce heat to low, and let simmer. Add oregano, and continue to simmer until slightly thickened, 1 1/2 to 2 hours, stirring occasionally. Add basil. Season with salt and pepper to taste. The sauce may be kept in the refrigerator up to 3 or 4 days in an airtight plastic container or in the freezer for up to 1 month.

I did ! I put cream cheese spread in the middle of the 2 patties with garlic salt and pepper & grilled and put some lettuce and pickles , hmmmmmmmmm wow ! yummmy ! very juicy humburger samdwich ! Thank you very much Chef Jason ! I think this is one of the best burgers I have ever tasted in my life .

These would be great in a BLT
The flare up comes from the oil in the marinade.
Why the flare up ? Is it because tomatoes are waxed ?

and i tried it with saute ham and cream reduction coarse chop the grill tomatoes
through in some peas-and toss them in bow tie noodles little raw red onions on top for garnish… wow the saltiness of ham and grill tomatoes bought the sauce right out onions gave a little kick i like onions not for everyone lol .. thanks
You got to try this on a roll with grilled chicken ,slice avacodo, baby spinach and mayo.So good. enjoy.

Yes, it is just out of habit.
It doesn’t apply to tomatoes, but when cooking meats like chicken putting the tongs on the grill saves you from getting another pair to take them off with when done. Its a food contamination thing, you cook the tongs off so your not using the same tongs on raw chicken then on the final product.
Why he does it here I don’t know…force of habit perhaps.

Marinara Sauce
Personally, I only use Tomatoes, garlic, oil (pref olive), salt and pepper. A small amount of chopped pancetta goes nice here too if you happen to have it on hand.
I also use onion and parsley with some sauces
Just skip the cilantro.
