Question by Taus: What’s wrong with this stuffed tomatoes recipe?
I made this recipe I found on a website. But when I tasted it, it was too hot and lemony. It had too much *something*, but I’m not sure what.

Can anyone tell me what’s wrong with it, and what I should do to calm down the flavour? Thanks

# slices of stale brown bread
# 1 tsp ground coriander
# 5 tbsp chopped fresh coriander
# Seasoning
# 4 beef tomatoes
# 1 clove(s) garlic, crushed
# 100 g (3 ½ oz) canned chick peas, drained
# Juice of 1 lemon
# 1 tbsp olive oil, plus extra for greasing
# 1 red onion, finely chopped
# 1 tsp cayenne pepper
# 1 tsp ground cumin

The onions are cooked in cumin, cayenne pepper and corriander powder, then added to a blended puree of the tomato insides with lemon + garlic. This is all mixed with bread crumbs, and fresh corriander, and then the mixture is scooped into the hollow tomato shells and cooked.

That is a lot of coriander, do you even like it’s taste??
and way tooooo much lemon, I think.

  2. Reduce the amount of cayenne pepper and lemon juice by half, then add more to taste if needed.

  3. “juice of one lemon” is in specific. try using 2 tbsp lemon juice. or omitting it and just squeezing it over the finished product. i don’t think the cumin is too much. also, try using a higher density brown bread, like pumpernickel.

  7. The juice of 1 lemon differs depending on how big your lemon is and how much you squeeze. You can reduce the amount of lemon by using just a squeeze instead of juicing the whole lemon.

    The heat is coming from the cayenne pepper. You can reduce it to your taste or eliminate it completely if you’d like.

  8. To calm down the flavor use..

    1/2 Garlic Clove
    1/2 of 1 Lemon Juice
    1/4 tsp Cayenne Pepper
    1/4 tsp Cumin

  9. The combination of coriander, fresh and ground; with juice from one lemon; ground cumin; and ground cayenne are what’s making this dish taste lemony and spicy. I would leave out the cumin and lemon juice which should help the recipe. Also cut down on the amount of cayenne pepper or substitute it with ground black pepper.

  10. Judging by your recipe it looks like there is way too much coriander in the recipe – 6 teaspoons! Heat diminishes coriander the longer it is cooked and with the addition of cayenne pepper and garlic I can see how the end result would be hot. Coriander (cilantro) leaves have a very different taste from the seeds, similar to parsley but “juicier” and with citrus-like overtones.
    I would incorporate only half of the ground coriander and only use the juice of 1/2 a lemon (tomatoes are high in acidity anyway) but replace the liquid from the lemon with water or broth.
